Wilton, New Hampshire, and Minneapolis, 1979 to 2024. A non-profit school that teaches organic dairy farming runs out of money, buys seven cows, and starts selling yogurt to pay for the teaching. The teaching closes. The yogurt becomes a national brand and is sold to a French multinational for a sum nobody at the school could have imagined. Four decades later and twelve hundred miles west, an Oglala Lakota chef runs the same structure backward: he builds the business first, then founds a charity and gives it the restaurant, the training kitchen and the food company to hold. Two organizations, assembled in opposite orders, and one question underneath both — which entity is supposed to carry the payroll, and what exactly the other one is for. Covers Samuel Kaymen, Gary Hirshberg, Sean Sherman, The Rural Education Center, and Stonyfield.
