New York, Indiana and the American breakfast aisle, 2006 to 2025. A high school student is diagnosed with type 1 diabetes and with epilepsy, and is put on a ketogenic diet that removes from his mornings the one food he had always eaten. A decade later, out of finance and after two software companies that went nowhere, he starts baking cereal in a Manhattan apartment and is told by people who teach cereal manufacturing for a living that what he wants cannot be made on the equipment that exists. He asks them for the physical reason. What follows is a company, a factory in Indiana, a hundred million dollars of retail sales, and a question about how much of that the question itself explains. Covers Krishna Kaliannan and Catalina Snacks Inc.
