Read it:
Chicago and Connecticut, 2008 to 2026. Peter Rahal wants a protein bar that matches the diet he is already eating, so he writes down the macronutrients first and the ingredients second, and ends up with egg whites, dates and nuts pressed cold in his parents' basement. Bill Shufelt wants a beer with the alcohol taken out, and discovers that the alcohol was doing four jobs nobody had itemized: preservative, solvent, body, and the entire legal definition of the product. Both men reason from the contents outward. Both run into a federal labeling rule that was written for something else. One sells for six hundred million dollars; the other builds a category that did not exist. Covers Peter Rahal, Bill Shufelt, and Athletic Brewing.
