Los Angeles and Austin, across sixty years. A Stanford MBA running a failing chain of convenience stores against 7-Eleven decides that the way out is to stock less, and in 1967 opens a store in Pasadena that carries a few thousand items where a supermarket carries fifty thousand. Two thousand miles away and eleven years later, a college dropout in a Victorian house in Austin opens a natural-foods store whose organizing document is a list of ingredients it refuses to sell. Both men are sometimes called merchants. Both were something closer to editors, and what each of them built was made out of the things left off the shelf. This is an account of subtraction as a business. Covers Joseph Hardin Coulombe, John Mackey, Trader Joe's, and Whole Foods Market.
