Monte Carlo, London and Paris, 1846 to 1935. Auguste Escoffier, a Provençal cook who learned supply and preservation as an army caterer in a besieged fortress, meets César Ritz, a Swiss mountain village's youngest son who has taught himself hotels, and the two of them take a kitchen at the Savoy in London. What they build there is not a style of cooking. It is an organization: the brigade de cuisine, in which one plate is assembled by five men who each do a single thing. It collapses the time a dish takes, makes a real à la carte menu possible for the first time, and costs the cook his old trade and most of his waking day. In March 1898 the Savoy's directors dismissed them both over the accounts. Covers Auguste Escoffier, César Ritz, and Savoy.
