Read it:
New York, 1985 to 2025. A St. Louis wine salesman with no cooking training opened a restaurant on a block nobody wanted, off a square then known for its drug market, and spent the next four decades arguing that the thing a restaurant sells is not food but the way a guest is made to feel. He wrote the argument down, built eleven restaurants and a burger chain on it, took the chain public, and then tried to prove the doctrine could survive its own arithmetic by abolishing the tip in thirteen dining rooms at once. The experiment ran five years, cost him cooks and servers in both directions, and was reversed in a pandemic. This is the history of an idea about labor that had to be paid for. Covers Danny Meyer, Union Square Cafe, Union Square Hospitality Group, Gramercy Tavern, Eleven Madison Park, Tabla, Blue Smoke, Jazz Standard, and The Modern.
